Flavors and Landscapes of Cantabria: Anchovies, Wine, and Pastries
A full-day private journey through coastal fishing villages, green valleys, and family-run producers in the heart of northern Spain.
This private gastronomy tour from Santander takes you through three distinct landscapes of Cantabria, connecting you directly with the artisans and producers behind the region's most celebrated foods. The day moves from the seaside to the vineyard and into the mountain valleys, with tastings at each stop.
Cantabria's food culture is shaped by geography, and this itinerary reflects that diversity. You will encounter the briny precision of hand-processed anchovies, the clean minerality of local white wines, and the buttery sweetness of pastries that have been made the same way for generations.
The route is designed for travelers who want genuine access, not staged experiences. Every visit includes time with the people who produce the food, in the actual facilities where the work happens.
Tour Highlights
Tour the Conservas Emilia anchovy factory in Santoña and observe the traditional hand-processing methods that define this world-renowned product.
Visit a family-run winery and take part in a guided tasting of Cantabrian white wines, accompanied by a small snack.
Explore the Sobaos Joselin factory in Selaya, the largest producer of sobaos and quesadas in Cantabria, and tour the dedicated museum.
Stop at the Mirador de la Braguia, a panoramic viewpoint over the Cantabrian Mountains and the Pasiego Valleys.

Enjoy a product tasting after each visit, sampling anchovies, wines, sobaos, and quesadas directly at the source.
Discover the peaceful Pasiego Valleys, one of the most scenic and culturally distinct areas in inland Cantabria.
Itinerary
The tour begins with a visit to Conservas Emilia in Santoña, one of Spain's most important anchovy-producing villages. You will go behind the scenes to observe the intricate, handcrafted salting and filleting process that transforms fresh anchovies into a celebrated Cantabrian delicacy.
After the factory tour, a short scenic drive takes you along the port and seafront promenade, offering views of the bay that has sustained this fishing community for centuries.
The next stop is a family-run winery, typically Bodegas Vidular or Bodegas Bahia de Santander depending on the season, where you will walk through the vineyards and learn about the wine-making traditions of the region. The visit concludes with a tasting of the winery's white wines paired with a small snack.
In the low season, this visit may be replaced by a tour of a local artisan spirit distillery.
You will stop for lunch at a local restaurant in the Pasiego Valleys, a pastoral inland area known for its dairy farming heritage and striking green hillsides. After the meal, a panoramic drive through the valleys leads to the Mirador de la Braguia viewpoint.
From this elevated lookout, the views across the Cantabrian Mountains provide a natural counterpoint to the coastal landscapes visited earlier in the day.
The final stop is Selaya, home to Sobaos Joselin, the largest producer of sobaos and quesadas in Cantabria. The visit includes a tour of the production facilities and the on-site Sobao and Quesada Museum, which traces the history of these pastries in the region.
The day concludes with a guided tasting of freshly made sobaos and quesadas before the return drive to Santander.
