Walk with the chef to Sant'Ambrogio market, a daily food market frequented by local residents rather than tourists. Browse stalls of fruit, vegetables, cured meats, and cheeses to select the ingredients for the session. This step is included in the 9 am shift only and is not available on Sundays.
Back in the kitchen, start with the ragù and tomato sauce, which require the longest cooking time. While they simmer, learn to mix and knead fresh pasta dough using eggs and flour until the texture is correct.
