The group moves into the estate cellar, where family staff walk through each stage of the winemaking process. Visitors observe cement fermentation barrels, learn about the role of whole-cluster retention, and examine the French oak barrels used for aging.
The tasting begins with three IGT Toscana Rosso wines: Spinorosso, a structured and fresh Merlot and Pinot Noir blend with minimal sulfites; Fedespina, a territorial red from fifty-year-old vines with subtle sensory complexity; and Ca', a pure Merlot reflecting specific soil variations and microclimatic conditions of the estate.
