Workshop Itinerary
Arrive at the workshop venue in Olbia and meet your expert guide. Receive a brief overview of Sardinian pasta culture and the three shapes you will be preparing during the session.
Start with malloreddus, shaping the semolina-and-water dough into thin ridged shells using traditional techniques. Your guide will share the history and regional variations of this foundational Sardinian pasta.
Move on to stuffed pasta, learning to prepare culurgiones with a potato, pecorino and mint filling and ravioli with a sweet-and-salty Sardinian ricotta mixture. The characteristic pinched sealing of culurgiones requires particular attention and practice.
Watch and assist as the pasta you have shaped is cooked and finished with seasonal sauces and condiments. Grated Sardinian pecorino is applied generously to the malloreddus.
