How the Experience Unfolds

You move into the cheese factory attached to the farm. An expert artisan provides an introductory briefing on the techniques, tools and traditions behind Sardinian pecorino production.
The shepherd demonstrates each essential stage of the cheese-making process. Participants take an active role, working with the milk and curd under close guidance to understand the transformation from raw ingredient to finished cheese.
During the workshop itself, participants sample both fresh and mature pecorino. This direct comparison gives a clear and memorable sense of how ageing changes flavour and texture.
