During this three-hour workshop, participants prepare the entire dish from scratch: rolling fresh pasta dough, mixing a fragrant filling of potatoes, aged pecorino cheese, and fresh mint, and learning the precise hand movements needed to seal each piece in the traditional ear shape.

Workshop Programme
Participants are welcomed and given a brief presentation of the culurgiones recipe, its origins in Ogliastra, and its significance within Sardinian culinary tradition.
The chef walks through all the ingredients and tools required, explaining the role of each component including the fresh pasta dough, potato and pecorino filling, and fresh mint.
Participants prepare the fresh pasta dough and the traditional filling under the chef's guidance, learning proper consistency and technique at each stage.
The most distinctive part of the class: mastering the traditional spike-shaped closure called the còdu, a precise hand technique that defines authentic culurgiones.
The workshop ends with a convivial lunch or dinner where all participants taste the culurgiones they made, accompanied by a glass of local Sardinian wine.
